Mama Luciano Pasta Sauce

Ingredients:
3 1/2 - 28 oz. Cans of Sclafani San Marzano Tomatoes (see pic front, see pic back)
1 package (5 links / 6 lbs.) Mollica's Original and/or Hot & Spicy Sausage
1 lb. 85% lean hambburger
2 large eggs for hamburger
Olive Oil for frying meat
3 - 6 oz. Cans Contadina or Hunts Tomato Paste (see pic)
Sweet Basil
Parsley Flakes
Salt
Crushed Red Pepper
Locatelli Pecorino Romano grated cheese
3-4 cloves of garlic for meatballs
Progresso Italian Style Breadcrumbs (see pic)
Toothpicks for marking hot sausage or braciola
Large non-sick fry pan
6 quart crock pot cooker
Procedure
Meatballs
Finely chop 3 large cloves of garlic
Mix 1 lb of hamburger in a bowl
Add chopped garlic
Add tsp of salt
Sprinkle in sweet basil flakes to cover hamburger
Repeat with parsley flakes
Crack 2 large eggs into mix
Add tbs of Locatelli Pecorino Romano cheese
Add 1 1/2 heaping tbs of Progresso Italian breadcrumbs
Mix completely and evenly by hand
Roll scoops of mix in palms into about 1 1/2 inch balls
   (or size desired) until mix is used (see video)
Place rolled meatballs in a dish

Sausage
Cut 5 links (about 6 lb package) in half (see video)
Jab holes with knifepoint all around each (see video)
Place in dish

Frying Meat
Place large frying pan on stove and pour in olive oil to cover bottom (see video)
Pre-heat on medium heat for 5 minutes
Gently place some meat in pan, leaving room to roll over (see video #1, see video #2)
Fry each piece, turning as needed, to get good and brown (see video #3, see video #4)
When each piece is done, remove and place in dish

Tomato Sauce
After meat is fried, pour about 5 tbs of the grease into crock pot (see video #1, see video #2)
Open 4 28oz cans of Sclafani San Marzano Tomatoes (see pic)
Pour 1 can of tomatoes along with 1 6oz can of tomato paste (see video)
Blend until smooth and pour into crock pot
Repeat until using 3 1/2 28oz cans of tomatoes and 3 6oz cans of tomato paste
Gently add all fried meat and stir (see video)
Use cans to add about 1/2 cup of water into crock pot (see video)
Add seasonings and stir: (see video)
   Palmful of salt
   Sprinkle parsley flakes
   Sprinkle on sweet basil flakes
   Add crushed red pepper, optionally to taste
   Stir completely
Set crock pot to high for 6 hours


When done, remove crock from cooker and let cool for 10 min.
Place crock in refrigerator until completely cool
Use within a week or freeze portions in plastic wrap containers
